“Chia seeds are little packets of goodness that pack a big nutritional punch! They are a fantastic source of omega 3, fibre and protein and because they are great at absorbing liquid, they are surprisingly filling. There are so many different versions of chia puddings that you can make – this is one of my favourites!”
Ingredients (for 2 puddings)
- ½ cup chia seeds
- 1 cup coconut water
- ½ cup of mixed raw nuts
- ¼ cup cacao nibs
- 2 teaspoons of activated pepitas
- 1 kiwi fruit
- 4 medium sized strawberries
- 1 large passion fruit
Method
- Split the chia seeds into 2 glasses or bowls.
- Place ½ cup of coconut water in each and set aside.
- Dice the strawberries and kiwifruit into small cubes and set to one side.
- Crush the nuts in a mortar and pestle or roughly chop if you don’t have one.
- Take the chia seeds and coconut water (which should have started to thicken by now).
- Divide the nut mixture and stir in with the cacao nibs.
- Top with the strawberries, kiwi fruit and ½ a passionfruit.
- Sprinkle a teaspoon of the pepitas over the top.
