“These are one of may favourite treats to whip on a lazy Sunday morning! Wheat and dairy free, they are gentle on the digestive system, provide a good amount of fibre and who doesn’t love the combination of cacao and blueberries!”
Ingredients
- 1 cup organic spelt flour
- ¼ cup organic coconut flour
- 1 tablespoon of cacao powder
- 2 tablespoons of coconut sugar
- 2 organic, free range eggs
- 1 teaspoon of cinnamon
- 1 ½ cups of organic almond milk
- ½ cup fresh or frozen blueberries
Method
- Sift the spelt and coconut flours together into a large mixing bowl.
- Add the coconut sugar, cinnamon and cacao powder.
- In a separate bowl, whisk up the eggs with the almond milk.
- Add to the dry mixture and whisk to combine.
- Stir through the blueberries.
- Get a fry pan to medium heat and use a spoon to place small amounts of the mixture in the pan.
- Cook for 1 – 2 minutes on each side or until cooked through.
- Serve warm.
