“These are one of may favourite treats to whip on a lazy Sunday morning! Wheat and dairy free, they are gentle on the digestive system, provide a good amount of fibre and who doesn’t love the combination of cacao and blueberries!”

Ingredients

  • 1 cup organic spelt flour
  • ¼ cup organic coconut flour
  • 1 tablespoon of cacao powder
  • 2 tablespoons of coconut sugar
  • 2 organic, free range eggs
  • 1 teaspoon of cinnamon
  • 1 ½ cups of organic almond milk
  • ½ cup fresh or frozen blueberries

Method

  1. Sift the spelt and coconut flours together into a large mixing bowl.
  2. Add the coconut sugar, cinnamon and cacao powder.
  3. In a separate bowl, whisk up the eggs with the almond milk.
  4. Add to the dry mixture and whisk to combine.
  5. Stir through the blueberries.
  6. Get a fry pan to medium heat and use a spoon to place small amounts of the mixture in the pan.
  7. Cook for 1 – 2 minutes on each side or until cooked through.
  8. Serve warm.
