“Christmas is my absolute favourite time of the year! These bliss balls are super easy to make, look beautiful on your table or platter and are absolutely delicious. Guten-free, dairy-free, vegan and paleo, these little morsels of yumminess pack a good nutritional punch! With good fats, protein and fibre they will satisfy any sweet cravings that might sneak in, but don’t have too much of a good thing. They are quite energy dense so don’t overdo them.”

Ingredients

  • 1 cup almond meal
  • ½ cup organic coconut oil
  • 1 tsp tahini (I used the unhulled)
  • 1 tablespoon raw cacao powder
  • ¼ cup inca berries
  • ½ cup chia seeds
  • ¼ cup flax seeds
  • ¼ cup activated pepitas
  • Goji berries and extra pepitas to garnish

Method

  1. Soften coconut oil in a small bowl and mix in tahini.
  2. In a large mixing bowl, combine the coconut oil and tahini with the almond meal.
  3. Add in the chia and flaxseeds.
  4. In a blender or similar (I used the milling blade on my Nutribullet), blitz the inca berries and pepitas until they have the consistency of bread crumbs. Add to the mixing bowl.
  5. Stir well to combine all ingredients together.
  6. Use a teaspoon to take small amounts of the mixture and roll into balls.
  7. Place on a tray and top with 2 goji berries and a pepita for a festive finish!
  8. Place in the fridge for 5 – 10 minutes before consuming. If you are making them up for later, store in an airtight container in the fridge.
