“Christmas is my absolute favourite time of the year! These bliss balls are super easy to make, look beautiful on your table or platter and are absolutely delicious. Guten-free, dairy-free, vegan and paleo, these little morsels of yumminess pack a good nutritional punch! With good fats, protein and fibre they will satisfy any sweet cravings that might sneak in, but don’t have too much of a good thing. They are quite energy dense so don’t overdo them.”
Ingredients
- 1 cup almond meal
- ½ cup organic coconut oil
- 1 tsp tahini (I used the unhulled)
- 1 tablespoon raw cacao powder
- ¼ cup inca berries
- ½ cup chia seeds
- ¼ cup flax seeds
- ¼ cup activated pepitas
- Goji berries and extra pepitas to garnish
Method
- Soften coconut oil in a small bowl and mix in tahini.
- In a large mixing bowl, combine the coconut oil and tahini with the almond meal.
- Add in the chia and flaxseeds.
- In a blender or similar (I used the milling blade on my Nutribullet), blitz the inca berries and pepitas until they have the consistency of bread crumbs. Add to the mixing bowl.
- Stir well to combine all ingredients together.
- Use a teaspoon to take small amounts of the mixture and roll into balls.
- Place on a tray and top with 2 goji berries and a pepita for a festive finish!
- Place in the fridge for 5 – 10 minutes before consuming. If you are making them up for later, store in an airtight container in the fridge.
