“This is the perfect little treat to have after dinner if you’re looking for something a bit sweet, but still healthy. Packed with good fats, antioxidants and wonderful textures, I’m sure this will become one of your favourites too! (oh and kids love these!!)”
Ingredients
- ¼ cup of chia seeds
- ½ cup organic coconut milk
- 1 teaspoon of organic, raw cacao powder
- 1 teaspoon of honey (a bit more or a bit less depending on how sweet you like it)
- 6 – 8 activated cashews
- 1 teaspoon of cacao nibs
Method
- Place chia seeds in a bowl or glass.
- Cover with coconut milk.
- Stir in cacao powder and honey.
- Allow to sit for 2 – 3 minutes or until chia seeds start absorbing the coconut milk.
You may want to add a little more coconut milk if you like it a bit more ‘runny’.
- Top with the cashews and cacao nibs.
