“Quinoa is one of the few plant sources that provides us with complete protein. Protein is important to helping to keep our blood sugars stable so that our energy levels can be maintained throughout the day. This porridge is jam-packed with nutrients! Perfect for a post-work out breakfast.”

Ingredients
- ¼ cup quinoa
- ¼ cup oats
- 1 apple, grated
- 2 passion fruits
- 1 teaspoon of coconut oil
- 8 – 10 activated walnuts
- 1 tablespoon of goji berries
- 1 teaspoon of cacao
- 1 teaspoon of cinnamon
- 1 tablespoon of activated pepitas
- ½ – ¾ cup water
Method
- Place quinoa, oats and ½ cup of water in a saucepan over high heat. Bring to the boil and then reduce down to a simmer.
- Stir in grated apple, passion fruit, coconut oil, cinnamon, goji berries and cacao.
- Leave on a low simmer until the quinoa and oats are tender.
Note: You may need to add a little more water depending on the size of the apple and passion fruit you use. - Crush the walnuts in a mortal and pestle (or chop roughly) before mixing in.
- Sprinkle the pepitas over the top of your porridge before serving.
- This is best eaten warm, but can also be made in bulk and is just as yummy cold.
