“Usually when it comes to salads I’m all about the greens, but this one is all about the reds! Red vegetables are rich in antioxidants, particularly lycopene and vitamin C. This salad is one of my go-to’s on study days as it can also help with blood flow and circulation up to your brain!”
Ingredients
- 1 and a half cups of heirloom baby tomatoes
- 1 medium red capsicum
- 1/2 an avocado
- 1/4 cup baby spinach leaves
- 1/4 cup fresh basil leaves
- Extra virgin olive oil
- Good quality balsamic vinegar
- Goats cheese to crumble
- Rock salt and freshly ground black pepper.
Method
- Roughly chop tomatoes in all kinds of shapes – some in halves, some in quarters etc.
- Dice capsicum and add to the tomatoes.
- Cut avocado into cubes and add to the mixture.
- Roughly tear the basil and spinach leaves over the mixture and stir well.
- Dress generously with olive oil, balsamic vinegar, salt and pepper.
- Transfer to your serving plate and crumble goats cheese over the top.
