Ingredients

  • 2 free-range and organic eggs
  • 1 cup of fresh basil leaves
  • 1/4 cup of cannellini beans
  • 1 clove of garlic
  • 2 tablespoons of olive oil
  • 1/2 an avocado
  • Fresh lemon to serve

Method

  1. Blend or blitz the garlic, basil, cannellini beans and olive oil until smooth (I did mine in my nutribullet).
  2. Whisk the eggs in a separate bowl.
  3. Gently fold in the basil and bean mix.
  4. Pour into an omelette pan and cook through to your liking.
  5. Serve with some sliced avocado and fresh lemon
