Green veggies are a fantastic source of nutrition as they are rich in B vitamins, fibre and phytochemicals, food chemicals that tell our cells how to behave properly. Give your greens a make over with this quick and easy recipe.”

Ingredients

  • 1 Leek
  • 6 asparagus spears
  • 4 broccolini
  • 2 big handfuls of baby spinach
  • 10 – 12 snow peas
  • 1 zucchini
  • 2 cloves of garlic
  • 1 tablespoon of sesame oil
  • ½ teaspoon of dried chilli flakes
  • ½ teaspoon of nutmeg
  • ½ teaspoon of turmeric powder
  • 2 tablespoons of tamari
  • ¼ cup raw pecans

Method

  1. Finely slice leek and garlic.
  2. Chop asparagus, broccolini, zucchini and snow peas into roughly equal pieces.
  3. Heat sesame oil over a high heat in a large saucepan.
  4. Sauté leek and garlic for 2 – 3 minutes.
  5. Add chili, nutmeg and turmeric. Cook for 1 -2 minutes.
  6. Add in chopped greens and toss in spices and sesame oil.
  7. Cook for 3 – 4 minutes.
  8. Add tamari, baby spinach and pecans.
  9. Cook until baby spinach has just wilted.
  10. Serve alongside your favourite protein.
