Ingredients
- 1 Leek
- 6 asparagus spears
- 4 broccolini
- 2 big handfuls of baby spinach
- 10 – 12 snow peas
- 1 zucchini
- 2 cloves of garlic
- 1 tablespoon of sesame oil
- ½ teaspoon of dried chilli flakes
- ½ teaspoon of nutmeg
- ½ teaspoon of turmeric powder
- 2 tablespoons of tamari
- ¼ cup raw pecans
Method
- Finely slice leek and garlic.
- Chop asparagus, broccolini, zucchini and snow peas into roughly equal pieces.
- Heat sesame oil over a high heat in a large saucepan.
- Sauté leek and garlic for 2 – 3 minutes.
- Add chili, nutmeg and turmeric. Cook for 1 -2 minutes.
- Add in chopped greens and toss in spices and sesame oil.
- Cook for 3 – 4 minutes.
- Add tamari, baby spinach and pecans.
- Cook until baby spinach has just wilted.
- Serve alongside your favourite protein.
