“I absolutely love salmon! It takes next to no time to prepare, has a ridiculously good nutritional profile and is completely delicious. This recipe was put together on the fly based on ingredients that I had in my fridge. And it was so good, it’s now one of my go-tos when I’m cooking salmon.”
Ingredients
(This ingredient list will be enough for 1 salmon fillet.)
- 1 x skinned and boned salmon fillet
- 1/4 cup fresh coriander, chopped
- 1/4 cup fresh mint, chopped
- 1/2 clove of finely diced garlic
- 2 teaspoons of lemon juice
- 1 teaspoon of sesame oil
- Good pinch or grind of sea/ Himalayan salt
Method
- Combine finely chopped herbs in a bowl.
- Add garlic, sesame oil, lemon juice and salt. Stir well.
- Spread liberally over salmon and bake in a hot oven (180 degrees) for 10 – 12 minutes or until salmon is done to your liking.
I’ve served mine with greens and a sweet potato and carrot puree, but you can just as easily pair this with a salad.
