“Quinoa is one of the few vegetarian sources of complete protein. These super easy, super quick and super tasty patties are great to whip up as a mid-week dinner or you can make them a head of time and get organised for lunches. Serve with a big salad for an extra veggie hit!”

Ingredients

  • ½ cup quinoa
  • 1 cup of water
  • 1 large zucchini, grated
  • ½ red onion, finely diced
  • 2 free range organic eggs
  • ¼ cup of wholemeal spelt flour
  • Himalayan sea salt and black pepper

Method

  1. Place the quinoa and water in a saucepan.
  2. Bring to the boil and then reduce to a simmer until the quinoa is tender and all water is absorbed.
  3. Stir in the grated zucchini, onion and season with salt and pepper.
  4. Whisk the eggs in a separate bowl and add to the mixture.
  5. Stir in the spelt flour.
  6. Heat some sesame oil in a large pan.
  7. Spoon small amounts of the mixture into the pan.
  8. Cook for 3 – 4 minutes on each side or until golden and crunchy.
  9. Serve with a large green salad and a squeeze of lemon.
