“Quinoa is one of the few vegetarian sources of complete protein. These super easy, super quick and super tasty patties are great to whip up as a mid-week dinner or you can make them a head of time and get organised for lunches. Serve with a big salad for an extra veggie hit!”
Ingredients
- ½ cup quinoa
- 1 cup of water
- 1 large zucchini, grated
- ½ red onion, finely diced
- 2 free range organic eggs
- ¼ cup of wholemeal spelt flour
- Himalayan sea salt and black pepper
Method
- Place the quinoa and water in a saucepan.
- Bring to the boil and then reduce to a simmer until the quinoa is tender and all water is absorbed.
- Stir in the grated zucchini, onion and season with salt and pepper.
- Whisk the eggs in a separate bowl and add to the mixture.
- Stir in the spelt flour.
- Heat some sesame oil in a large pan.
- Spoon small amounts of the mixture into the pan.
- Cook for 3 – 4 minutes on each side or until golden and crunchy.
- Serve with a large green salad and a squeeze of lemon.
