They are the perfect balance of good quality complex carbohydrates and healthy fats; two nutrients that are super important for sustained energy and concentration. And who doesn’t love the combination of peanut butter and cacao?!”

Ingredients

  • 1/2 cup peanut butter
  • 1/2 cup of coconut oil
  • 1/2 cup of spelt flour, sifted
  • 1/4 cup cacao nibs
  • 1/2 cup of rolled oats
  • 2/3 cup almond meal
  • 1/4 cup maple syrup
  • 1 teaspoon of vanilla extract

Methods

1. Combine all dry ingredients in a large mixing bowl.
2. Melt coconut oil and then mix in peanut butter, maple syrup and vanilla.
3. Take tablespoons of the mixture and roll into balls. Flatten out slightly on a baking tray.
4. Bake on 180 degrees for 15 minutes and then turn oven down to 160 degrees and bake for another 10 – 15 minutes.
5. Cookies will be slightly soft when you pull them out, but will cool into the perfect texture!
6. Store in an airtight container.
