“These little patties are perfect for a quick mid-week dinner or something you can prepare ahead of time for an on-the-go breakfast or lunchbox filler. Filled with delicious fragrant mint, they are also great for digestive health!”

Ingredients
- 2 large zucchinis, grated
- 1/2 block of halloumi, grated
- 3 heaped tablespoons of almond meal
- 1/2 cup of freshly chopped mint
- 3 large eggs
- Olive oil for cooking
Method
- Place zucchini in a bowl with a good sprinkle of salt and set aside for 5 – 10 minutes to draw out the extra water. Squeeze with your hand to remove and then set zucchini flesh aside.
- Mix the grated halloumi, almond meal and mint together.
- Whisk the eggs and then add to the halloumi mixture. Stir well to combine.
- Add the eggs and halloumi mixture to the zucchini and then stir well to combine.
- In a large fry pan, add a little olive oil and then add a tablespoon of the mixture to form a little patty, flattening out as you go.
- Cook for 2 – 3 minutes on each side or until the patty is holding its shape. Flip and cook for a further 1 – 2 minutes or until cooked through.
- Repeat until you have used all your mixture and then serve alongside a nice big salad!
