mint and halloumi patties

Ingredients

  • 2 large zucchinis, grated
  • 1/2 block of halloumi, grated
  • 3 heaped tablespoons of almond meal
  • 1/2 cup of freshly chopped mint
  • 3 large eggs
  • Olive oil for cooking

Method

  1. Place zucchini in a bowl with a good sprinkle of salt and set aside for 5 – 10 minutes to draw out the extra water. Squeeze with your hand to remove and then set zucchini flesh aside.
  2. Mix the grated halloumi, almond meal and mint together.
  3. Whisk the eggs and then add to the halloumi mixture. Stir well to combine.
  4. Add the eggs and halloumi mixture to the zucchini and then stir well to combine.
  5. In a large fry pan, add a little olive oil and then add a tablespoon of the mixture to form a little patty, flattening out as you go.
  6. Cook for 2 – 3 minutes on each side or until the patty is holding its shape. Flip and cook for a further 1 – 2 minutes or until cooked through.
  7. Repeat until you have used all your mixture and then serve alongside a nice big salad!
