“This is one of my favourite salads and it always looks so beautiful when it is on the table (especially at Christmas time!) Pomegranate is one of the most nutritious fruits – rich in vitamin C, antioxidants and potassium, pomegranates are also believed to be a sign of good fortune and good health. Plus they taste delicious! Give this salad a go at your next dinner party or pair it along side some baked white fish.”
Ingredients
- 2 small zucchinis
- 2 cups of baby spinach
- 1/2 avocado
- The seeds of 1 pomegranate
- Goats cheese
- 1/4 cup extra virgin olive oil
- 2 teaspoons of lemon zest
Method
- Use a potato peeler to create zucchini ribbons or slice the zucchini length ways as thinly as possible.
- Heat a skillet or fry pan over medium heat. Line up each zucchini ribbon individually and cook zucchini for 1 – 2 minutes on one side, until just soft. Continue until you have cooked all the zucchini.
- Arrange your baby spinach on a large platter and top with the zucchini.
- Finely dice the avocado and add to the salad.
- Sprinkle over the pomegranate seeds and crumble the goats cheese.
- In a small bowl, combine the lemon zest with the olive oil and then pour over salad just before serving.
(Toasted pine nuts also go really well with this salad too!)
