Ingredients
- 1/2 bulb of fennel, finely sliced
- 1 and a half cups of red cabbage, finely sliced
- 1 large carrot, grated
- 1 Granny Smith apple, grated (with the skin on)
- 2/3 cup of mint
- Juice of a lemon
- Olive Oil
Method
- Combine all vegetables together and mix well.
- Add lemon juice and olive oil just before serving.
