  • 1/2 bulb of fennel, finely sliced
  • 1 and a half cups of red cabbage, finely sliced
  • 1 large carrot, grated
  • 1 Granny Smith apple, grated (with the skin on)
  • 2/3 cup of mint
  • Juice of a lemon
  • Olive Oil


  1. Combine all vegetables together and mix well.
  2. Add lemon juice and olive oil just before serving.
