“This is a brilliant old school naturopathic recipe that is fantastic for getting rid of coughs, colds and sore throats. You can take it as a preventative throughout winter or if you are feeling a little under the weather, take several times per day.”

Ingredients

  • 1 cup manuka honey or raw, organic good quality honey
  • 1 medium brown onion
  • 10 cm piece of ginger
  • 1 small chili, de-seeded
  • 3 gloves of garlic
  • 1/2 lemon, sliced with the skin left on (preferably organic)
  • 2 sterilised glass jar with lid

Method

  • Dice onion, chilli and garlic as finely as possible (the aim is to expose as much of the surface area as possible). Add all of this (any any juices on the chopping board) to the jar.
  • Use a microplane (or fine grater) to grate the ginger into the jar.
  • Add the lemon slices to the jar.
  • Cover with honey and secure lid tightly.
  • Place in a cool, dark place for 2 – 3 days, making sure that you shake the jar every morning. You will notice that the mixture becomes much thinner and more ‘liquidy’ over time – this is what you want.
  • After 3 days, strain off the liquid into the second sterilised jar. Discard the onion, chili, garlic and lemon.
  • Consume 1 tablespoon of the liquid at a time – it tastes surprisingly delicious!

TIP: If you are unwell, take 1 tablespoon every hour until you start to feel better. You can also add this to a mug of hot water and sip on it as a tea.
